The Scoville scale was developed by a pharmacist named Wilbur Scoville in the year 1912. Basically the scale measures the spicy heat of the chili pepper by the amount of capsaicin in the pepper. It is capsaicin that produces the burning sensation after eating a pepper. The more capsaicin the more heat.
